The Nutrition behind Fermented Foods and Learn how to make Sauerkraut!

Have you ever wondered what the science behind fermented foods is and why they’re so good for you? Everyone keeps talking about gut health, but what does that really mean. What is a prebiotic? What is a probiotic? Have you ever thought of what fuel your colon runs on? How about the cells that line your intestine? Nicole Warren is a nutritional therapist with a background in microbiology. One of her jobs is working for Olykraut, an organic sauerkraut company in Olympia. She knows the ins and outs of making sauerkraut as well as the ins and outs of digestion. In this class we will load up a crock to make a fresh batch of sauerkraut, we will take some amazing Olykraut sauerkraut flavors, and we will talk about the science behind good digestion and the important roles that bacteria play in our bodies!
